Ingredients

  • 12corn tortillas
  • 2 cupsshredded cheddar cheese
  • 2 cupsshredded Monterey Jack cheese
  • 2 cans(10 oz each) red enchilada sauce
  • 1 smallonion, chopped (optional)
  • 2 tbspvegetable oil
  • ½ tspgarlic powder
  • ½ tspcumin

Instructions

Preheat oven to 350°F.

Warm the tortillas until soft and pliable. This makes them easier to roll without breaking.

Combine the cheddar and Monterey Jack cheeses in a bowl. Reserve about ½ cup for the top.

Fill each tortilla with cheese and a small amount of chopped onion, then roll tightly.

Place rolled tortillas seam-side down in a baking dish.

Pour enchilada sauce over the tortillas and top with the remaining cheese.

Bake for 20–25 minutes, until hot and bubbly.

From the family

Maria makes her own enchilada sauce, but store-bought sauce works beautifully too. The key is generous amounts of cheese and not skipping the warmth step for the tortillas.
